Spinach Spaghetti Pie

An interesting looking dish and a simple recipe :) … of course if you like spaghetti and spinach pies … It goes well as a starter, for friends reunions, or why not brunch :) … and just to know … many kids react better to spinach in a pie ( especially spaghetti pie )versus sautéed spinach. A crispy crust and a soft delicious interior will make you want another slice. You can use any kind of pasta instead of spaghetti if you don’t have spaghetti or you prefer another pasta type.


How I Did It …

  • I preheated the oven to 210C with ventilation

  • In a small pot I added 50 ml of water, a table spoon of olive oil and the fine sliced garlic cloves, I brought it to boil and then let it simmer for about 8-10 minutes … I just wanted to gentle extract some garlic flavour in this liquid without frying the garlic in oil …

  • I boiled the pasta al dente, a minute less than the time on the package then I drained it (I kept the pasta boiling water) and I combined it (in a big bowl) with the sautéed garlic and it’s liquid and I also added 2 table spoons of pasta boiling water

  • In a bigger pot I simmered the spinach for about 2 minutes then I drained the water and transferred it into a bowl with a pinch of salt over. I let it rest for 10 minutes, drained it again and the chopped it with a chef knife…

  • In added the spinach to the pasta bowl with the lemon juice …

  • In another bowl I beat well three eggs and added a tea spoon of fresh grated parmesan and the emmentaler cheese in small pieces, then I mixed well the eggs with the cheese and parmesan and a pinch of salt … I added the beaten eggs with parmesan to the pasta bowl and mixed well all the ingredients. A pinch of salt, a grind of green pepper and a drizzle of olive oil were the final touch …

  • I transferred the content in a cast iron pot on baking paper ( you can use any kind of tray - depending how you want the shape of the pie :)… ) . I put the cast iron pot in the heated oven ( 210C with ventilation ) for 15 minutes then I took it out, sprinkled over 2 table spoons of freshly grated parmesan cheese and a tea spoon of bread crumbs and put it back in the oven for another 10-15 minutes - until I liked the crust :))


INGREDIENTS - for 2 persons


  • Best you can get spaghetti pasta - about 250 g ( dried )

  • Organic / Best you can get garlic - 3-4 medium garlic cloves

  • Organic / Best you can get eggs - 3 pcs. medium

  • Organic / Best you can get spinach - 400 grams fresh or 100 grams simmered and chopped

  • Good quality extra virgin olive oil - 20 ml

  • Fresh lemon juice - 5 ml

  • A grind of pepper

  • A pinch of salt

  • Best you can get parmesan cheese - cca 15-20 grams

  • Best you can get ementaller cheese - cca 25-30 grams

  • Bread crumbs - about 60 grams (optional)
