A Kind Of Spinach Sformato …

And now you ask yourself what is “sformato” all about :)… Sformato is a light Italian flan like dish. Or a tasty pie with vegetables but not only. Boiled or steamed vegetables, pureed or chopped, mixed with beaten eggs and some cheese (Parmigiano Reggiano is always a good choice but the list can be very long…) then baked about half an hour. Some bread crumbs over the top will make the children more interested :))

The recipe

  • Peel the potatoes, the carrots and the celery, cut them in large dice pieces and steam them for about 25 minutes … Test them with a fork: if you can insert he fork in the potatoes without too much effort they are ready.

  • Preheat the oven to 200C with ventilation.

  • Peel the zucchini and slice them in round pieces about half a centimetre thick, sprinkle over a pinch of salt and let them rest about 15 minutes or so.

  • Gently simmer the spinach for about 5 minutes, drain it then chop it until you obtain a fine texture.

  • Beat the eggs in a medium bowl then add the spinach and half of the parmesan quantity and mix well.

  • Prepare a heavy pot with a baking paper inside to be handy. And make sure you have a lid.

  • Mash with a fork the potatoes and the vegetables and spread half of the quantity in the pot on the baking paper.

  • Arrange the zucchini slices over the mashed vegetables and potatoes layer then spread or pour half of the spinach-eggs-parmesan mixture.

  • Add the second layer of mashed potatoes and vegetables and pour over the second half spinach-eggs-parmesan mixture.

  • Sprinkle over the remaining grated parmesan cheese and the breadcrumbs with a drizzle of extra virgin olive oil, put the heavy pot in the oven and bake it with the lid on for about 30 minutes at 200C with ventilation. After about 30 minutes, take the lid off and bake it 10-15 minutes more until you like how it looks. Take it out of the oven and let it rest minimum 30 minutes before serving. You can also serve it after it cools down.

  • Organic / Best you can get celery (root) - 150 grams peeled

  • Organic / Best you can get zucchini - about 200 grams

  • Organic / Best you can get potatoes - 500 grams peeled

  • Organic / Best you can get carrots - 150 grams peeled

  • Organic / Best you can get eggs - 5 medium eggs

  • Organic / Best you can get spinach - 250-300 grams simmered, drained and chopped

  • Organic / Best you can get parmesan cheese - 25 grams

  • Organic / Best you can get / Home made breadcrumbs - 25 grams

  • Good quality extra virgin olive oil - 20 ml

  • A dust of freshly ground pepper

  • A pinch of salt
