A Pumpkin Creamy Soup

Autumn is about pumpkins… hot creamy soups and delicious pies… (and yes … the Haloween:)). If you did not know “that” pumpkin has only cca. 26 kcal / 100 grams and “that” 100 grams of pumpkin brings you about 50% of your Vitamin A daily needs, you have two more reasons to try it :) …

I tried to make a light creamy pumpkin soup which matches perfectly the chill yellow sun and the golden leaves but also can bring some “steam” in the long rainy days…

How I did it …

I preheated the oven to 215C with ventilation. I cut a beautiful pumpkin in half, then in slices … about 1.5 cm thick, then placed them in a big tray on baking paper and baked them for about 35 minutes. I turned off the heat and let them rest for another 30 minutes in the hot oven. In this time I peeled a carrot, two medium onions and a small celery root, I cut them in medium dice pieces and simmered them for about 30 minutes in a small amount of water… just enough to cover them. I wanted a small quantity of intense vegetable soup ;).

After I took out the pumpkin from the oven I put it in a blender together with about 200 ml of the vegetable soup and a few pieces of carrots and celery. I added a pinch of salt,  a grind of pepper, a t spoon of olive oil and a few drops of fresh lemon juice. A piece of dried tomato is not a bad idea at this point… I blended the soup on medium low speed for about 1 minute then I transferred it in a small pot, I reheated it then I put it in a serving bowl with a drizzle of pumpkin oil and some baked pumpkin seeds (which I prepared in advance - 5 minuted at 210C with ventilation in the oven) over the top. Bread croutons and some fresh grated parmesan cheese are up to you :) …

INGREDIENTS - for 2 persons

  • Organic / Best you can get pumpkin - about 1 kg raw, you need 6-8 slices (1.5-2 cm thick)

  • Organic / Best you can get garlic - 2-3 garlic cloves

  • Organic / Best you can get onion - 2 medium

  • Organic / Best you can get celery (root) - 150 grams peeled

  • Organic / Best you can get carrots - 150 grams peeled

  • Good quality extra virgin olive oil - 5 ml

  • Good quality pumpkin oil - 5 ml

  • Fresh lemon juice - 5 ml

  • A grind of pepper

  • A pinch of salt

  • Best you can get parmesan cheese - cca 15-20 grams (optional)

  • Bread croutons - about 60 grams (optional)
