Baked porridge
If you are asking yourself how to prepare the morning oat flakes except overnight oats or classic porridge maybe I can give you an idea. Baked porridge :)… You don’t have to stay near the stove and stir it and in about 30 minutes you get a warm and tasty bowl of porridge. Let’s give it a try :). I used only oat flakes, a banana, frozen blueberries, cashew, a tea spoon of honey and organic rice drink. You can use milk or any vegetable drink according to your preferences. And for the other ingredients feel free to use anything you like.
The porridge
Preheat the oven at 210C with ventilation. You also need an oven suitable bowl, pot or small tray. Smash the cashew nuts with the blade of a chef’s knife or with a food processor or blender. Mash the banana and mix it with the cashew crumbs, the oat flakes, the frozen blueberries and the rice drink. You can add a pinch of cinnamon powder if you consider. If you have organic lemons you can add half tea spoon of grated lemon zest. Transfer the porridge to the baking tray or bowl and bake it for about 25 minutes. Take the tray out pour over the honey trying to cover as much surface you can, set the oven on grill and put the tray back in the oven for another 5-7 minutes, until the honey begins to caramelise. INGREDIENTS - for one big porridge or two small-medium :)
Organic / Best you can get oat flakes - 60 grams
Organic / Best you can get rice drink - 200 ml
Organic / Best you can get raw cashew - 25 grams
Organic / Best you can get bananas - 1 medium banana
Organic / Best you can get blueberries - 60 grams (fresh or frozen)
Organic / Best you can get lemon zest - 1/2 tea spoon or a half lemon squeeze (optional)
Organic / Best you can get cinnamon powder - 1/2 tea spoon (optional)
