Chickpeas Zucchini Salad
A nourishing and tasty salad. It takes a little time, (not too much until you grill the zucchini, the peppers and the cashew), but the taste you get makes you forget everything :). The logic behind this salad: to be vegan (or suitable for religious fasting), to have an important amount of proteins and healthy fats (we have the chickpeas, the nuts and the seeds) and of course to be tasty. For preparing the zucchini and the green peppers I used a cast iron grill. I coloured a little bit the cashew nuts on the same grill, just enough to get a little crispiness. I tore the salad by hand for a rustic appearance and I chopped the cashew, the grilled peppers and the pine seeds together for better mixing in the salad and… for a pesto like look ;). A good drizzle of olive oil, a half lemon squeeze and a few orange slices will dress perfectly this salad. And don’t forget about the balsamic vinegar … always works with grilled zucchini :)… Enjoy !
INGREDIENTS - for 1 person
Organic / Best you can get fresh lettuce - 150 grams
Organic / Best you can get canned chickpeas - 100 grams
Organic / Best you can get raw cashew nuts - 20 grams
Organic / Best you can get zucchini - 100 grams
Organic / Best you can get pine seeds - 10 grams
Organic / Best you can get green peppers (small ones for grill) - 2 small peppers
Organic / Best you can get oranges - 2- 3 slices
Fresh lemon juice - 10 ml or a half lemon squeeze
Best you can get balsamic vinegar - 5 ml or a tea spoon
Good quality extra virgin olive oil - 10-15 ml
A pinch of salt
