Granola Bars… The Easy Way :)…

A healthy option for eating on the go :) The target ? Slow releasing carbs (gradual energy release), healthy fats (your heart will be happy), vitamins, fibres and very good taste !

For this recipe you can adjust and switch the ingredients according to your prefferences. I used about 300 grams organic oat flakes, 200 ml of organic rice drink, 150 grams frozen organic blueberries, 50 grams cashew, and 30 grams dried figs (you can use dates or honey as a sweetener), 30 grams natural almonds, 15 grams pumpkin seeds for the base.

For the topping I used 30 grams cocoa butter, 20 grams organic almond butter, 100 grams avocado, and 20 grams organic cocoa powder, 40 to 50 ml bio rice drink, and 30 grams dates .

First I put the oat flakes in the oven on baking paper for 8 to 9 minutes at 200 C. Then smashed the almonds in smaller pieces (with the meat hammer) and let them in the oven at 200 C for 5 minutes.

After the oven part I gave a short blend (like 15 seconds on a lower speed) to the oat flakes in order to give them a fine texture and then I mixed them with the smashed and baked almonds in a larger bowl.

I put in the blender the other ingredients which I prepared for the base (the 200 ml of organic rice drink, 150 grams frozen organic blueberries, 50 grams cashew, and 30 grams organic figs), 15 grams pumpkin seeds) and I blended them for 1 minute at medium to high speed until I reached a smoothie consistency (keep in mind that if you vary the recipe by introducing other dried fruits or nuts you shood adjust the blending time and the amount of liquid in order to obtain a smooth composition.)

I added this smoothie to the flakes in the bowl and mix it by hand until I obtained a sticky paste. Then placed this paste into a baking tray (on baking paper for easy removing it later) and pressed it to fit the bottom.

I blended for a minute and a half the ingredients for the topping but first I heated the coconut oil and the almond butter. After blending the cosistency was similar to honey.

I spread the topping over the paste in the tray, and sprinkled over some cocoa powder, then I covered with aluminium foil and put it in the freezer for two hours. (you can sprinkle cinnamon powder if you are looking for a Christmas cookie taste)

After two hours in the freezer, I took it out and cut it. I obtained ten delicious granola bars. I packed them separately. It is a good idea to keep them in the freezer until the day you consume them.
