Grilled Tomatoes Sauce Summer Pasta With Grilled Halloumi
A light summer pasta dish. It is the season of tomatoes… You can find a lot of varieties in the local markets. A creamy and fresh sauce with grilled tomatoes, garlic and lemon seemed interesting to me so I gave it a try. And If you heat the grill for the tomatoes add some halloumi slices in the story :).
The recipe
Cut the tomatoes in 1 cm thick slices, season them with a pinch of salt and a drizzle of olive oil and grill them about 3 minutes on both sides. I used a cast iron grill.
Finely slice the garlic, put it in a thick bottom casserole, add pinch of salt, a spoon of olive, 50 ml of water and gently simmer for about 5 minutes, then turn off the heat and let the liquid cool down a bit.
Put the grilled tomatoes in a blender with the garlic and its boiling liquid, add a tea spoon of olive oil, a pinch of salt, a grind of pepper, a half lemon squeeze and blend for about 30 seconds at medium low speed to get a creamy sauce. Put the sauce in a casserole and keep it warm.
Boil the pasta according to the instructions on the package. Meanwhile, cut the halloumi cheese in 1 cm thick slices, season a bit with salt and pepper, them grill them about 3 minutes on each side.
After the pasta is ready , mix it with the blended grilled tomatoes sauce and the teared down basil leaves and put it in the serving plate. Arrange the grilled halloumi slices over the top then give it a drizzle of olive oil. Enjoy.
INGREDIENTS - for two portions
Organic or “Best you can get” !
Dried pasta - 150 grams - I used spaghetti
Halloumi Cheese - 150 grams
Fresh Basil - a few leaves
Tomatoes - 250 grams
Garlic - 2 cloves
Fresh lemon juice - Half lemon squeeze
Good quality extra virgin olive oil - about 15 ml
A pinch of salt or more :)
A grind of green pepper
