I Tried Fettuccine Alfredo :) …

If you google for “Fettuccine Alfredo” you’ll find a “simple” pasta recipe only with few ingredients: pasta ( fresh egg fettuccine pasta ), butter, pasta water and parmesan cheese ( and of course a pinch of salt for seasoning ). The warm pasta is tossed in butter, grated parmesan and hot pasta water. The result ? A creamy emulsified sauce :) Sounds good …

This is the original recipe. It is named after Alfredo di Lelio who invented this pasta dish in Rome. The original name was “Fettuccine al triplo burro”, and it is known that Alfredo di Lelio invented this pasta dish for his wife Ines in 1907 or 1908 (Wikipedia). Fettuccine Alfredo is very popular in United States but the original recipe is often modified to more comercial versions.

Most of the time, me and my son prefer red sauce pasta but sometimes a variation is needed. I kept the butter at minimum for a lighter sauce. INGREDIENTS - for 2 persons

  • Best you can get fresh fettuccine with egg - 250-300 grams

If you can’t find you can use dried (like I did :) ) but you loose a bit of silky texture :)

  • Best you can get parmesan cheese - cca 25-30 grams

  • Organic / Best you can get butter - 15 grams

  • A pinch of salt

What I Did :)

I spread the butter on the bottom of a deep plate. I boiled the pasta (according the time on the package - if you have fresh pasta about 3-4 minutes) then I transferred it (directly from the boiling pot) on the plate together with two or three spoons of water from the pot I boiled the pasta. Immediately I added the grated parmesan cheese and mixed the pasta with a fork and spoon until I got a delicate creamy sauce. You don’t have to add anything more ( maybe a pinch of salt ) … The butter, the parmesan and the pasta water are enough for all the magic :) …
