Socca Or Chickpeas Golden Pie
I was thinking for a long time to cook an interesting chickpeas pie, and I don’t now why, I always found a reason to postpone it. I used chickpeas a lot in salads and of course for preparing hummus, but I didn’t make a chickpeas pie… till now. I tasted socca during a trip and I decided to try it. There are many approaches on this topic on the internet, but for the first time I tried something fast and simple. Chickpeas flour, water, olive oil and a pinch of salt. Let’s do it :)…
The recipe
In a medium bowl add the chickpeas flour, the salt, the olive oil and pour the water slowly, while whisking with a fork. Mix well all ingredients. You can do it by using your hand but I recommend a low speed mixer or a kitchen machine.
Let the dough rest for at least half an hour at room temperature. You can let it rest more (a few hours if you have time) but the minimum amount of time is about 30 minutes.
Preheat the oven to 250C with ventilation.
Prepare a round baking tray or an oven suitable skillet (I baked the pie in a 26 cm iron skillet which I preheated also in the oven).
When the oven reached the temperature, pour the dough in the skillet or tray, if you use tray. (I used also baking paper). Help yourself with a spoon when you transfer the dough to the tray, if you consider.
Bake the socca for about 20-25 minutes, until you get that golden colour.
Serve it warm, immediately after baking it.
This is the recipe for basic plain socca but feel free to add your favourite herbs in the dough or sprinkle some parmesan over. Using tahini will get you straight to a hummus pie.
But, for the first time I recommend to make it plain, as close you can get to original. It is a tasty delicate pie, crusty outside and soft inside. Famous and easy to make :). You’ll find out why it is famous…

Chickpeas flower - 150 grams
Water - 250 ml
Sea salt - 1/2 t-spoon
Olive oil - 1 and 1/2 spoons of olive oil
