Spinach Pesto Pasta

A colourful pasta recipe. There is a lot of fresh spinach in the local market so I wanted to take the opportunity. Add a few leaves of fresh basil, pine nuts, parmesan cheese and olive oil and you are almost ready. Enjoy !

The recipe

Prepare the pesto. Simmer the spinach for about 5 minutes, then drain and let it cool. Blend the pesto ingredients at medium low speed.

Boil the pasta according to the instructions on the package then put it into a large bowl with the pesto, and mix gently till all pasta is covered with pesto.

Transfer the pasta on the serving plates, sprinkle over the grated parmesan and finish with a drizzle of olive oil.

INGREDIENTS - for 2 persons

Organic / Best you can get

  • Dried Pasta 250 grams

  • Parmesan cheese - 15 grams

  • Extra virgin olive oil - 5 ml

  • A pinch of salt

For the pesto

  • Spinach - 250 grams

  • Fresh basil - a few leaves

  • Parmesan cheese - 15 grams

  • Extra virgin olive oil - 10 ml

  • Pine nuts - 15 grams

  • Lemon - 1/2 medium lemon
