Thin zucchini pie

So thin that you can’t even call it a pie :). Light, elegant but in the same time very very easy to prepare. All you need is some happy eggs, a fresh zucchini, a good olive oil and 30 minutes. (I forgot to mention the parmesan cheese but if it is an emergency situation you can start without it :))…)

INGREDIENTS - for 2 - 3 persons (a tray)

  • Organic / Best you can get zucchini - 500 grams (two small or a bigger one)

  • Organic / Best you can get (happy :)) eggs - 4 pcs

  • Good quality extra virgin olive oil - 2 table spoons or 20 ml

  • Organic / Best you can get parmesan cheese - 25 grams

  • Organic / Best you can get fresh lemon juice - 5 ml

  • A pinch of salt (3 or 4 times :))

  • A dust of pepper

How I made it …

Preheat the oven at 210C with ventilation

Slice the zucchini in 4-5 mm thick pieces, put them in a bowl, sprinkle with salt and pepper add two table spoons of olive oil and mix gently… The olive oil will coat the zucchini slices.

Place the zucchini slices in a large tray on baking paper and put them in the hot oven for about 20-25 minutes or until you like the colour :)

Meanwhile beat well 4 medium eggs in a bowl with a pinch of salt and a dust of pepper. At this point you can add 20 ml of water and 5 ml of fresh lemon juice.

Take out the zucchini tray from the oven, pour over the beaten eggs and bake again for another 6-8 minutes or again until you like the colour :) …

Sprinkle over the parmesan cheese as you let the tray cool down. You should cut it easy in happy thin pieces …
