Minestrone Soup

Get a fresh organic chicken and a bunch of fresh organic vegetables and you’ll have endless possibilities of making a great soup. Just choose your favourites spices. “Minestrone” title refers to an Italian origin thick soup, most of the time with addition of pasta or rice. This version is also a soup with pasta and basil but the soup is not so thick. We have a lighter version here but full of flavour … suitable for kids and fitness enthusiasts :)…

ADVICE :

Feel free to choose your favourite spices. If you fell that the basil is not what you want, fresh parsley leaves match perfectly in the scene. You can also replace pasta with a preferred variety of rice for a gluten free version of this soup.

INGREDIENTS - For Two Persons

Good quality extra virgin olive oil - 1 spoon tbsp

  • Organic / Best you can get spaghetti pasta - 80 grams

  • Organic / Best you can get chicken breast or chicken drums without skin - 150 - 200 grams

  • Organic / Best you can get celery - 100 grams ( peeled prepared to cook )

  • Organic / Best you can get carrots - 150 grams ( peeled prepared to cook )

  • Organic / Best you can get onion - 100 grams ( peeled prepared to cook )

  • Organic / Best you can get garlic - 2 garlic cloves

  • A few leaves of chopped fresh basil / Dried basil - 1 spoon

  • Organic / Homemade/ Best you can get tomato juice :) - 500 ml

  • Water - 2.0 liters

  • Salt - 1 tea spoon

Put the cold water, the salt, the meat and the onion into a pot and heat the pot until the water is boiling, bring to simmer and let the meat simmer for 25 minutes at slow fire - check the meat if it is done - cooking time can vary with the meat type

  • Add the celery, the carrots, the chopped garlic and the tomato juice and let them simmer for another 25 minutes

  • Add the spaghetti pasta, the olive oil, and the basil and simmer for the time recommended on the pasta package minus 2 minutes then stop the fire or turn the heat off

  • Before serving, let the soup rest about 30 min
