Steamed Broccoli - Tomato Warm Salad With Avocado And Egg

Warm salad for cold days… and not only. This salad can serve both as breakfast and a healthy lunch and it is very tasty. Low on carbs and rich in quality proteins and healthy fats it is a nourishing fitness friendly option. Don’t forget that the value of this salad is based on the value of it’s ingredients.

Feel free to add good quality mustard or balsamic vinegar. A fresh natural yogurt dressing can be taken into consideration…

INGREDIENTS - For one person

Good quality extra virgin olive oil - 1 spoon tbsp

  • Organic / Best you can get broccoli - 200 grams

  • Organic / Best you can get tomatoes - 150 grams

  • Organic / Best you can get avocado - 1 piece / 100 grams

  • Organic / Best you can get pepper - 50 grams

  • Organic / Best you can get pumpkin seeds - 5 grams / 1 spoon

  • Organic / Best you can get eggs - 1 egg

  • Organic / Best you can get lemons - 1 lemon

  • Salt - to taste

  • Pepper - to taste

THE SALAD

Prepare the raw ingredients

  • Boil the eggs - recommended soft - 8 minutes

  • Steam the broccoli for about 8-10 minutes then put them in a bowl

  • Add the tomatoes the pepper and the avocado

  • Add the egg on the top

  • Sprinkle the pumpkin seeds over the salad

  • Pour over the olive oil, the salt and squeeze the lemon

  • Don’t mix it too hard because it is fragile

  • Enjoy
