A Happy Grilled Cheese Sandwich
Happy because kids are happy when they hear about it… and they are happy to cook it also. A good quality bread (sourdough bread is a very good idea), at least two types of cheese at your choice (I used mozzarella and emmental), a touch of butter and of course a good drizzle of olive oil. Maybe some good quality mustard on the interior will give it the extra kick. I used a cast iron grill and I was happy with the result :), but you can use a heavy skillet if you don’t have a cast iron grill.
The recipe
Preheat the skillet. In my case the cast iron grill took about five minutes on medium heat.
Prepare the bread. About 1 cm slices should be fine.
First, a thin layer of butter with a pinch of salt on one side of the bread slices (if you want to try, now is the moment for a small spread of mustard over the butter).
Arrange thin slices of mozzarella and emmentaler on the butter spread side of one bread slice and cover with the butter spread side of another bread slice.
Drizzle some olive oil on the exterior of the sandwiches and grill them for about 2-3 minutes on each side. Check them every 30 seconds… you don’t want to overcook or burn the bread. The bread type and the grill temperature have a major influence on the cooking time.
Take the sandwiches of the grill, let them chill a minute then cut them in two and enjoy the melting cheese look :).
INGREDIENTS - for 2 sandwiches
Organic or “Best you can get” !
Sourdough Bread - 4 slices (1 cm thickness)
Butter - about 10 grams
Emmental cheese - 80 grams
Mozzarella cheese - 100 grams
Mustard - half a teaspoon (optional)
Good quality extra virgin olive oil - 10-15 ml
A pinch of salt
