A kind of “Sciuè Sciuè” Pasta …

I was thinking this days about making an interesting pasta salad and I wasn’t decided if it should be a cold or a warm one, when I discovered an interesting recipe on a Italian food blog …(https://www.lacucinaitaliana.com/recipe/pasta/spaghettino-sciue-sciue) … To be honest the name caught first my attention … Then I read the article and decided to make a kind of “Sciuè Sciuè” pasta instead of the pasta salad. I always wanted to combine flavours from “spaghetti aglio e olio” and “penne arrabbiata” so I tried this here. This recipe is very light and you can eat the leftovers later as a cold pasta salad …

“Sciuè Sciuè” is an expression (in Neapoletan dialect) which means “Hurry Hurry”. You pronounce it like “Shoo - eh, Shoo - eh” or “Shway, Shway” … and this is fun :) … Ok, the main idea is that even if we are looking to a very quick pasta recipe, this does not mean the result is less delicious. Everything here is about the ingredients and the timing …

The recipe

Boil the pasta al dente … about a minute less than the recommended boiling time on the package. Meanwhile peel the garlic cloves, finely chop them and put them in a pot or a sauce pan with two table spoons of olive oil. Heat it and add the finely chopped dried tomatoes, 50 ml of water and a pinch of salt. Bring the pot or sauce pan to the boiling point, then reduce the heat and gently simmer about 5-6 minutes. Turn off the heat and add the lemon juice. Drain the pasta and combine it with the liquid in the sauce pan. At this point you can add the chilli flakes. Let the pasta rest about 3 minutes and absorb the liquid then pour over a few drops of olive oil. You can transfer the pasta to the serving plate. Sprinkle some fresh grated parmesan cheese over and … enjoy it slowly :))… “Sciuè Sciuè” - “Hurry hurry” is only for the cooking part :) …

INGREDIENTS - for 2 persons

  • Best you can get pasta (you can use penne, fusilli ..) - 250-300 grams

  • Best you can get parmesan cheese - cca 25-30 grams

  • Organic / Best you can get dried tomatoes - cca 25-30 grams

  • Organic / Best you can get garlic - 2-3 garlic cloves

  • Organic / Best you can get dried chilli flakes - cca 1/2 t-spoon

  • Fresh lemon juice - 5 ml

  • Organic / Best you can get olive oil - 20 ml

  • A pinch of salt
