Baked Quinces Dessert Smoothie

Quinces … often the yellow spots on a winter window :)). Maybe these late autumn fruits are a little bit underrated. Baked quinces have a delicate flavour which combined with cinnamon and a drop of honey is sending you directly in the Christmas world. I tried to make a dessert smoothie with an oatmeal porridge like base, a baked quince and apple paste middle layer and salty baked and crushed walnut kernels sprinkled over the top (third layer)…This recipe can store a lot of memories :) …

The porridge base

I put in the blender the rice drink (with coconut) together with the oat flakes, a tea spoon of honey, 20 grams of raw cashew, a tea spoon of fresh grated lemon zest and a pinch of cinnamon powder. I waited about 10 minutes (so the oat flakes could absorb some liquid and became softer) and blended the “porridge” (that is how I called this mix :) …) about 1 minute at medium speed. It became very thin and soft but I still could pour it in three glasses. I filled the glasses just a bit under their half capacity.

The quince apple paste

I baked the quinces and apples on a big tray on baking paper for about 30 - 35 min at 200C without ventilation. Before baking I cut the fruits in two or three pieces. After baking the fruits I removed the hard parts and the burnt skin and placed them in the blender, with a tea spoon of honey, 20 grams of raw cashew, the juice from half a lemon and a pinch of cinnamon powder ... I blended them about a minute at medium high speed and then I transferred the pasta in the glasses over the porridge layer. The two layers will had different colours and that made the appearance more interesting :) …

The salty walnuts layer

I baked the walnut kernels for about 5-6 minutes at 200C with ventilation,I removed them from the oven, crushed them and added a pinch of salt over. As a final touch I sprinkled them over the quince and apple paste in the glasses. This was the final layer … Very easy to prepare. Give it a try … Enjoy !!!

INGREDIENTS - for about 3 portions

  • Organic / Best you can get quinces - about 400 grams raw, you need about 2 pieces

  • Organic / Best you can get oat flakes- 40 grams

  • Organic / Best you can get honey - 2 tea spoons grams

  • Organic / Best you can get apples - 2 medium apples, cca. 300 grams

  • Organic / Best you can get lemons - 1/2 lemon

  • Organic / Best you can get raw unsalted cashew- 40 grams

  • Organic / Best you can get cinnamon powder - 1/2 tea spoon

  • Organic / Best you can get rice drink with coconut - 200 - 250 ml

  • Organic / Best you can get walnut kernels - 15 grams

  • A pinch of salt
