Almond Butter December Granola

A nice crunchy December granola with cinnamon, walnuts and dried plums. Very tasty and easy to prepare. You can replace honey with maple syrup and the dried plums with your favourite dried fruits. Feel free to experiment with your choice of nuts and seeds. This is just a winter combination that I think it works :).

The recipe

Preheat the oven to 180C with ventilation.

In a small casserole add the honey, the almond butter, the cocoa powder and the coconut butter and gently heat it until all the ingredients are liquid and you can mix them well.

Add the oat flakes in a large bowl together with the melted ingredients from the casserole and mix well until the flakes incorporate all the liquid mixture. You can add a pinch of salt at this point.

Spread the mixed ingredients on the bottom of a large baking tray. I used a sheet of baking paper becouse the oat flakes are sticky.

Bake for the granola about 25 minutes with a half time check (when you turn the granola on the other side), then take the tray out of the oven and let it cool down at room temperature.

Bake the walnuts separately at the same temperature for about 10 minutes then let them rest until they cool down.

Cut the dried plums in smaller pieces.

Mix all components and place them in closed recipient, like a jar with a lid for example. Store the granola in a dry place.

INGREDIENTS - for two-three medium portions

Organic or “Best you can get” !

  • Oat flakes - 250 grams

  • Almond butter - 15 grams

  • Walnuts - 15 grams

  • Coconut butter - 40 g

  • Honey - 30 ml

  • Dried plums - 30 grams

  • Pure cocoa powder - 15 grams

  • A dust of cinnamon powder

  • A pinch of salt
