Baked Garlic Mozzarella Sandwich
It was about time for a delicious sandwich :). Sourdough bread, baked garlic with cherry tomatoes and basil, some fresh mozzarella and a good drizzle of olive oil. Make sure that you grill the bread first :)
The steps
Preheat the oven to 200C with ventilation
Cut the garlic heads in two (make the cut transversal so you cut all the cloves in two) and place them together with the cherry tomatoes in a small tray on baking paper (or any oven suitable dish). Add one spoon of olive oil, a pinch of dried basil and a pinch of salt and mix well, then put the tray in the oven for about 20-25 minutes.
Take the tray out of the oven and let the content chill about 10 minutes or so.
Slice the bread in 1.5 cm thick slices.
Grill the bread on a cast iron grill or a heavy skillet (You can toast it but by grilling it you add another later of taste, bitter and smoky), then give it a drizzle of olive oil and a pinch of salt while it is hot.
On a plate mash the baked cherry tomatoes. You’ll get a nice tomato sauce.
On a separate plate squeeze the garlic heads so the garlic cloves will come out. Mash the garlic cloves and mix them with a table spoon of tomato sauce.
Spread the garlic pasta over the grilled slices of bread.
Slice the mozzarella in half centimetre thick slices and arrange it over the mashed garlic layer.
Spread the cherry tomato sauce over the mozzarella.
A final drizzle of olive oil and if you consider… some grated parmesan over the top. Enjoy !
INGREDIENTS - for two portions
Organic or “Best you can get” !
Sourdough or Quality Bread - 300 grams or four medium slices
Cherry Tomatoes - 300 grams
Garlic - about 50 grams, 2 medium garlic heads
Extra virgin olive oil - 2 table spoons
A pinch of salt
A pinch of dried basil
Parmesan - 20 grams
