Another homemade granola :)

It happens to me many times, to be in a store and spend a lot of time searching for the “perfect” granola. Tasty, but not too sweet and without refined sugar added. Crunchy, with some seeds and nuts but not too many and without any oily texture. And every time I am searching a proper granola I ask myself why not making my one granola. The idea is simple: oat flakes, some fat (like coconut butter), some sweetener (like honey or maple syrup), a selection of nuts and seeds and a handful of dried fruits. And a dust of cinnamon for the fans :). Let’s give it a try :)…

The recipe

Preheat the oven to 180C with ventilation.

In a large bowl mix the oat flakes with the almonds and  pumpkin seeds, the coconut butter and the honey. Before using the coconut butter you have to gently heat it in a coffee pot or by placing the jar in hot water in order to make it liquid. The same rule applies to the honey. If you use maple syrup instead of honey you don’t have to heat it because it should be already liquid. Mix well to coat all flakes and seeds with the oil and syrup. A pinch of salt can be added at this point.

Spread the mixed ingredients on a large baking tray in a 1-1.5 cm layer. I use baking paper for avoiding the granola to stick to the tray.

Bake for about 20-25 minutes with a half time check (when you turn the granola on the other side).

Take the granola out of the oven and let it cool down then add the dried blueberries, the cinnamon powder and place it a closed recipient. A jar with a lid will work just fine.

INGREDIENTS - for two medium portions

Organic or “Best you can get” !

  • Oat flakes - 250 grams

  • Raw almonds - about  25 grams

  • Pumpkin seeds - 15 grams

  • Coconut butter - 40 grams

  • Honey - 30 ml

  • Dried blueberries - 30 grams

  • A dust of cinnamon powder

  • A pinch of salt
