Baked Breaded Broccoli And A Creamy Potato Sauce

Broccoli, eggs, parmesan and a creamy light potato-carrot sauce (with a touch of lemon) … What do you say ? Enough healthy, tasty and nourishing ?. Crunchy outside and soft inside :) let’s give it a try.

The recipe

The broccoli

Wash the broccoli and cut it into florets.

In a pot, bring about 2 litres of water to a boil then add a tea spoon of salt.

Add the broccoli, reduce the heat, let them simmer about 3 minutes then drain the water and let them cool down a bit.

Preheat the oven at 200C with ventilation.

Prepare a baking tray with a baking paper sheet on the bottom.

Beat the eggs with a pinch of salt and a grind of pepper.

Prepare three deep plates one with the flower, one with the beaten eggs and one with a mix of breadcrumbs and grated parmesan cheese.

Take each broccoli floret and dip it in each plate -flour, beaten eggs and bread crumbs, then place it in the baking tray on baking paper.

After you finished dipping and coating all broccoli florets give them a drizzle of olive oil, a pinch of salt and put the tray in the oven for about 15 to 20 minutes. Checking them after 15 minutes is not a bad idea.

The Potato Sauce

A delicate simple potato sauce. Peel and cut the potatoes and the carrots in medium dice pieces, put them in a casserole cover with water, bring to a boil, then reduce the heat and let them simmer for about 25 - 30 minutes. Let them cool down then blend them together with 200 ml of the boiling water, a tea spoon of olive oil, a tea spoon of grated parmesan cheese, half a lemon squeeze and a pinch of salt. You’ll get a creamy liquid potato sauce. The is the plain base recipe (you’ll be amazed how much starch contains the boiling water and how creamy is the sauce) but you can and chopped parsley or dried tarragon or any herb you think…

When you serve the broccoli deep half of the florets in the potato sauce for a shiny golden coating. The softness of this sauce goes well with the crispiness of the broccoli. I bet the kids will like this combination especially if you let them do the dipping part :)

The broccoli

  • Broccoli - 500 grams

  • Wholemeal flour - 150 grams

  • Happy Eggs - 2 large

  • Bread crumbs - about 100 grams

  • Parmesan cheese - about 15 grams

  • Happy Eggs - 2 large

  • Good quality extra virgin olive oil - 10 ml

  • A pinch of salt

The potato sauce

  • Potatoes - 250 grams

  • Broccoli - 150 grams

  • Parmesan cheese - about 10 grams

  • Fresh Lemon Juice - half lemon squeeze

  • Good quality extra virgin olive oil - 5 ml

  • A pinch of salt
