Chocolate Minty Smoothie

Looking for some interesting breakfast - “after 8 style” :) ? A smoothie is always a good ideea. If you like the mint - chocolate combination give it a try.  This recipe is also vegan, sugar and gluten free so everybody is happy. Forgot to mention the healthy fats. :)

The minty layer

Coconut rice drink, banana, oat flakes, raw cashew, a tea spoon of fresh grated lemon zest, lemon juice just a half lemon squeeze and 5-6 fresh mint leaves (or half tea spoon if dried leaves). I blended them at medium speed for about 1 minute.

The chocolate layer

Coconut rice drink, avocado, cocoa powder, raw almonds, dates and oat flakes. I blended them at medium speed for about 1 minute and a half.

Mix the two layers in the serving bowl or glass according to you preferences. I let the minty layer in the middle but it is up to you…

I grated some 100% dark chocolate over the top but you can also sprinkle some cocoa powder if you like…

INGREDIENTS - for two medium portions

Organic or “Best you can get” !

The minty layer

  • Raw Cashew - about 15 grams

  • Rice drink with coconut - 200 ml

  • Oat flakes - 10 grams

  • Bananas - about 150 grams or one medium banana

  • Lemon zest - about one tea spoon

  • Lemon juice - 10 ml or half lemon squeeze

  • Fresh mint leaves - 5-6 leaves (or 1/2 tea spoon of dried mint leaves)

The chocolate layer

  • Raw Almonds - about 15 grams

  • Oat flakes - 15 grams

  • Rice drink with coconut - 150 ml

  • Avocado - about 150 grams or one medium avocado

  • Cocoa powder - a table spoon about 10 grams

  • Dates - 20 grams
