How I made it - Very Simple

  • I made the pesto by blending the pine seeds, the olive oil, the lemon juice, the parmesan and the basil at low speed. You can use the classic “mortar and pestle” method if you like it and you have the tools :)

  • I crushed the avocado with a fork, added a short lemon squeeze over and seasoned it with salt and pepper, then I combined it with the pesto in a medium bowl and and mixed them well with a wood spoon until I got a creamy texture.

INGREDIENTS - for two portions

Organic or “Best you can get” !

  • Avocado  - 150 grams - or 1 medium avocado

  • Pine seeds - 25 grams

  • Fresh Basil - about 1 cup

  • Parmesan cheese - 20 grams

  • Garlic - 2 cloves

  • Fresh lemon juice - Half lemon squeeze

  • Good quality extra virgin olive oil - about 15 ml

  • A pinch of salt or more :)

  • A grind of green pepper
