Baked Chicken Stew

After Christmas … a dinner with family and close friends:)… A slow cooked chicken stew with classic polenta sounds comfy and a little bit italian ... A lettuce salad with an orange flavoured dressing and you are almost there... And here comes a fruity, light, white young Sauvignon to complete the scene:).

The chicken stew

I used a thick enamel pot and a pizza stone which I placed in the oven and I cooked the chicken about 2 hours at 180 C and a half an hour at 200 C with ventilation, then I let it rest for another 1 hour and a half … The meat became very tender and matched very well the creamy polenta …

The steps

  • Preheat the oven to 180 C with ventilation

  • Cut the chicken in serving size pieces

  • Place the chicken in the heavy pot

  • Season the chicken with salt and pepper and pour over two glasses of white wine

  • Wash, peel and cut the vegetables ( onion, celery, parsley, carrots ) in small pieces and add them to the pot. Cut the garlic in fine slices and sprinkle it over

  • Pour over 2 table spoons of olive oil, the tomato paste and add water just enough to cover the meat

  • Put the pot in the oven and bake it 2 hours at 180C then increase the temperature to 200 C for a half an our

  • Stop the heat and let it rest in the hot oven about one hour and a half

  • While the chicken is resting you can prepare the polenta ( you have the classic polenta recipe on this blog ) and the salad and yes :) … you can start tasting the wine

  • The salad dressing (optional): I reduced 50 ml of fresh orange juice until I obtained 20 ml of concentrated juice and I combined it with 10 ml of fresh lemon juice, 20 ml of olive oil and 1/2 tea spoons of grated orange zest

INGREDIENTS - for 6 persons

  • Organic / Best you can get chicken  - 2 medium whole chicken about 1200-1400 grams each

  • Organic / Best you can get celery (root) - 150 grams peeled

  • Organic / Best you can get garlic - 5 garlic cloves

  • Organic / Best you can get parsley (root) - 150 grams peeled

  • Organic / Best you can get carrots - 150 grams peeled

  • Organic / Best you can get onion - 3 pieces

  • medium

  • Good quality extra virgin olive oil - 10-15 ml - about 2 table spoons

  • A pinch of salt or more :)

  • Best you can get white wine - cca 30 ml
