Lemon pesto pasta with broccoli

After the New Years Eve celebrations and fancy Holiday meals maybe it’s time to try something simple and light with a warm “back home” flavour… And we are back to pasta :) … but this time light with lemon and broccoli and a pesto touch …

The recipe

  • Prepare the pesto by blending the pesto ingredients - you can use a food processor, blender or the classic mortar and pestle

  • Gently simmer the broccoli for about 4-5 minutes then cut it or tear it into small pieces.. try to keep the florets

  • Boil the pasta according to the instructions on the package then put it into a large bowl with the pesto, a half tea spoon of grated lemon zest and the lemon juice, the broccoli, and mix all ingredients

  • Transfer the pasta on the serving plates, give it an olive oil drizzle, sprinkle over some parmesan cheese and that’s it :) Enjoy

INGREDIENTS - for 2 persons

  • Best you can get pasta  - dried around 250 grams - I used fettuccine

  • Organic / Best you can get broccoli - 100 - 150 grams

  • Organic / Best you can get lemon - 1/2 medium lemon

  • Organic / Best you can get parmesan cheese - 10 grams

  • Good quality extra virgin olive oil - for a drizzle on the top :)

  • A pinch of salt

For the pesto

  • Good quality extra virgin olive oil - 2 spoons

  • Organic / Best you can get pine seeds - 15 grams

  • Organic / Best you can get fresh basil - 15 grams or 10-15 leaves

  • Organic / Best you can get parmesan cheese - 20 grams
