Something Like Lyonnaise Salad
“Salade Lyonnaise” is a classic French salad. Frisee lettuce, home made croutons, a poached egg, bacon and a Dijon vinaigrette are the main ingredients … It is a nourishing, delicious and easy to prepare meal, perfect for an early lunch or a late breakfast :)) … Having this famous salad as a starting point I tried to make something similar but a little bit lighter and more focused on healthy fats. Long story short I replaced the bacon with a lemon avocado mousse, added some pumpkin seeds and instead of croutons I used just a dust of home made bread crumbs. Soft boiled eggs instead of poached eggs and for the dressing I used a combination of olive oil, lemon juice and balsamic vinegar but also added a tea spoon of Dijon mustard (I used a version with honey…).
You can give it a try or maybe you have some ideas for your own version:).
The steps …
Tear the lettuce leaves with your hands and arrange them in the middle of the serving plate.
Prepare the avocado “mousse”. Remove the skin and smash it with a fork in a large plate until you like the texture. Ad the olive oil, the lemon juice, a pinch of salt and stir it well.
Transfer the mousse on the serving plate over the lettuce and sprinkle over the pumpkin seeds.
Boil the egg for about 6-7 minutes. It has to be soft but you can be able to remove the shell without messing the content :)
Place the egg on the avocado mousse and make a cut on the long side of it. A part of the yolk will pour over the avocado mousse but that is what you want.
With a tea spoon pour some dressing on the egg right on the cut then drizzle the rest evenly over the salad.
Sprinkle the breadcrumbs over and … enjoy this delicious salad while the egg is warm !

Best you can get bread crumbs (“diy” if possible) - about 1 tea spoon
Organic / Best you can get lettuce (baby frisee if you find ) - 100 - grams
Organic / Best you can get raw pumpkin seeds - 15 grams
Organic / Best you can get “ready to eat avocado” - 1/2 medium avocado
Organic or “happy eggs” - 1 egg (but it is up to you)
Organic / Best you can get lemon juice - 1 tea spoon or a squeeze
Good quality extra virgin olive oil - 1 tea spoon
A pinch of salt
For the dressing
Good quality extra virgin olive oil - 1 tablespoon
Fresh lemon juice - 5 ml or a tea spoon
Best you can get balsamic vinegar - 5 ml or a tea spoon
Best you can get Dijon mustard - 5 ml or a tea spoon
A pinch of salt
Freshly ground pepper
