Baked Eggs… In Avocado

“Avocado and eggs” is a “new classic” combination. Why cooking the egg using the avocado as a “baking tray” ? Why not ? It is a very healthy, tasty and simple recipe and you can add the final touches according to your preferences :).

The recipe

  • Preheat the oven at 215C with ventilation

  • Take out the avocado seed and scoop about one tea spoon of avocado just to make enough space for one egg.

  • With a tea spoon drizzle some olive oil each avocado hole.

  • Each avocado half should accommodate one egg. You can crack the egg and gently pour it into the avocado half or you can crack the egg and pour it in a bowl, then place the yolk in the avocado half and complete with egg white till you fill the hole (the second option works better if you have smaller avocados and larger eggs).

  • Put the avocados in a small tray or an oven suitable dish and bake them for about 20 minutes then take them out and sprinkle with salt, pepper and freshly grated parmesan cheese. At this point you can add finely chopped parsley. Feel free to use your favourite cheese for the topping or don’t use at all.

  • You can serve the eggs baked in avocado with a light arugula salad dressed just with a tea spoon of olive oil, a squeeze of lemon, a few drops of quality balsamic vinegar and a pinch of salt.

INGREDIENTS - for 2 persons

  • Organic / Best you can get avocado - 1 medium ripe avocado

  • Organic / Best you can get eggs - 2 medium eggs

  • Organic / Best you can get parmesan cheese - 25 grams

  • Organic / Best you can get fresh parsley - a few leaves (optional)

  • Organic / Best you can get lemon juice - a squeeze from a half lemon

  • Good quality extra virgin olive oil - 20 ml

  • A dust of freshly ground pepper
