Parsley Potato Pie
A delicate potato pie. Works good also as a side dish. A very simple recipe with a good looking result :) suitable for any occasion…
The recipe
Preheat the oven at 220C with ventilation
Peel the potatoes and cut them in medium small pieces.
Simmer the potatoes for about 15 minutes then put them in a bowl. Add half of the grated parmesan cheese, a table spoon of olive oil and a pinch of salt and mash them with a mixer until you have a fine texture.
Chop the parsley leaves.
In a bowl, beat the eggs very well then add the finely chopped parsley.
Combine the eggs with the mashed potatoes and mix well with the mixer at low speed until you get a fine texture.
Pour the potato-egg mixture in a baking dish. The thickness should be about 1.5 - 2 cm.
I used a cast iron pan for baking but any round or rectangular tray will work.
I also used baking paper.
Bake the “Pie” for about 25 minutes, sprinkle over the other half of the parmesan cheese and the bread crumbs then bake again for another 20 minutes until you like the crust.
Let it rest about 30 minutes after you take it out of the oven.

INGREDIENTS - for about 4 persons
Organic / Best you can get potatoes - around 600 grams
Organic / Best you can get parsley leaves - a handful
Organic / Best you can get happy eggs - 2 pcs and 2 egg whites
Good quality extra virgin olive oil - 1.5 spoons or 15 ml
Organic / Best you can get parmesan cheese - 30 grams
Organic / Best you can get / Homemade bread crumbs - 15-20 grams
A pinch of salt (3 or 4 times :))
