“Beef Guacamol” sandwich :)
This idea came in my mind a few years ago, when I was trying to find an interesting, tasty and healthy combination for a sandwich from “Subway”. (while I was waiting to place the order and watching the ingredients). Since then this is the only combination my son wants from “Subway” :) ...
One time when I was standing in the line at “Subway”, together with my son, waiting to place our order, there was a guy in front of me indicating the ingredients for his sandwich. He pointed to the avocado paste recipient and said “one more guacamol on my sandwich” with a strange but funny accent, referring that he wanted one more portion of avocado paste. We liked very much how it sounded - (it was really funny I did not figured out where this guy came from but sure from a place where he ate “guacamole”. so together with my son decided to name our Subway sandwich “Beef guacamol”. Our “Beef guacamol” (as we order it from Subway) contains: wholemeal bread with seeds, beef slices, avocado paste, lettuce, tomatoes, pickled cucumbers, hot pickled chilli peppers, honey mustard and a drizzle of olive oil. Last time I tried the wraps instead of bread and it was very good.
Because we order this sandwich almost anytime we travel, I tried to replicate it at home.
So what do we need ?
INGREDIENTS - for 3 sandwiches
Wholemeal bread (if possible with sunflower or pumpkin seeds)
Wraps are also a good option
Beef - rib eye or sirloin 200 g, enough for 3 sandwiches
Ready to eat avocado 1 pcs, enough for 3 sandwiches
Fresh lemon juice - 1 tbsp
Tomatoes 100 g (30-35 g for one sandwich)
Lettuce 50 g - (15 g, a few leaves for each)
Pickled cucumbers 100 g (30-35 g for one sandwich)
Hot pickled chilli peppers - 15 g (5 g for one sandwich)
Olive oil 10 ml per sandwich
Good quality mustard - 15 g (5 g for one sandwich)
A pinch of salt
I prepared the beef sirloin on a cast iron grill. The cut was 2 cm thick and I cooked it 8 minutes turning it every minute on the other side, then let it rest 3-4 minutes.
While the meat was resting I cooked the bread on the same grill 1-2 minutes on each side then I drizzle it with olive oil and spread the avocado paste “guacamol” on it.
I cut the beef in thin slices, put them on the top of the bread, added the lettuce, the tomatoes, the pickled cucumbers, the mustard, the chilli, a pinch of salt and a drizzle of olive oil.
Awesome sandwich.
You can try it with other type of meat if you like, or make it veggie. I just presented our’s…
