“Cloud Eggs” With A Touch Of Parmesan
If you want a new idea about how to cook eggs maybe you should try “Cloud Eggs”. A very “fluffy” and tasty experience. Kids will love it and for most of us I bet it is something new. Not an omelette and not fried eggs. Just clouds :)…
The Recipe
Preheat the oven to 215C with ventilation.
Separate the egg yolks from the egg whites and put the yolks in small bowls or even coffee cups.
Add a pinch of salt and a grind of pepper to the egg whites and beat them with an electric mixer until you get a stiff foam consistency.
Before beating the egg whites add a pinch of salt and a grind of pepper
Prepare a baking tray with a sheet of baking paper on the bottom.
Place the beaten whites with a spoon in the tray on baking paper.
Try to make two round mounds, they should look like clouds.
It is a good idea to drizzle some olive oil on the baking sheet in the area you intend to place the “clouds”, because once cooked they will come off easier.
With the spoon, make small pits in the centre of the mounds just enough to accommodate the yolks.
Gently place the yolks in the pits you created.
Sprinkle over the grated parmesan cheese.
Bake about 6-8 minutes for a creamy yolk texture or more if you don’t prefer runny yolks.
A short drizzle of olive oil may be a good idea.

Happy Eggs - 2 large eggs or whites from 3 medium eggs
Parmesan cheese - 20 grams
Extra virgin olive oil - 2 table spoons
A pinch of salt
A grind of pepper
