Overnight Oatmeal With Ricotta And Strawberry Mousse

The Recipe

  • Mix the oat flakes with the rice drink (or the liquid you choose) and leave them in the refrigerator overnight.

Next day

  • Blend at medium speed the strawberries with the cashews and the dates until you have a smooth sauce consistency.

  • In a large bowl add the soaked oat flakes, the ricotta cheese, half of the strawberry blended “sauce”, the lemon zest, the lemon juice and mix well.

  • Transfer the composition in a smaller serving bowl or a glass recipient and spread over the other half of the strawberry sauce. You can also arrange a few strawberry slices over the top.

  • Enjoy :)

INGREDIENTS - for one person

Organic or “Best you can get” !

  • Oat flakes - 40 grams

  • Rice drink with almonds - 150 ml (you can use milk or any kind of vegan drink you prefer )

  • Raw cashew - 20 grams

  • Ricotta cheese - 100 grams

  • Strawberries - 150 grams (fresh or frozen)

  • Dates - 30 grams

  • Lemon zest - 1/2 tea spoon

  • Fresh lemon juice - 5 ml or a short squeeze
