The Recipe
Mix the oat flakes with the rice drink (or the liquid you choose) and leave them in the refrigerator overnight.
Next day
Blend at medium speed the strawberries with the cashews and the dates until you have a smooth sauce consistency.
In a large bowl add the soaked oat flakes, the ricotta cheese, half of the strawberry blended “sauce”, the lemon zest, the lemon juice and mix well.
Transfer the composition in a smaller serving bowl or a glass recipient and spread over the other half of the strawberry sauce. You can also arrange a few strawberry slices over the top.

INGREDIENTS - for one person
Organic or “Best you can get” !
Oat flakes - 40 grams
Rice drink with almonds - 150 ml (you can use milk or any kind of vegan drink you prefer )
Raw cashew - 20 grams
Ricotta cheese - 100 grams
Strawberries - 150 grams (fresh or frozen)
Dates - 30 grams
Lemon zest - 1/2 tea spoon
Fresh lemon juice - 5 ml or a short squeeze
