Deep Chocolate Cake - Vegan
Deep, soft and satisfying …
Yes it is sweet and caloric but at least it is made with natural ingredients :). Perfect as a reward for an intense workout, a running session or a long walk.
After all it is a healthy dessert for kids and adults, everybody who loves chocolate.
My child truly loves it. I also made it at a meeting with regular chocolate lover friends and they liked it very much. I did dot tell them from the start that it was vegan.
THE CRUST
INGREDIENTS :
Raw nuts or almonds or pecan nuts - 150-200 grams
Maple syrup - 1 spoon
Sea salt - 1 tea spoon
Cinnamon - 1/2 tea spoon (optional)
Coconut butter - 1 spoon
Combine the crust ingredients in a blender or food processor and mix them at low speed until they are minced and well mixed. The mixture should look like couscous not like a paste. Place the mixture into a 20-22 cm tart pan and press with your hands the crust on the bottom of the pan. Make sure that the crust has an even distribution on the pan.
THE FILLING (feeling :)) :
INGREDIENTS :
Raw almond butter - 50-75 grams
Dried dates - 150 grams
Maple syrup - 1 spoon
Coconut butter - 1 spoon
Vanilla bean, scraped - 1 pcs.
Cacao powder - 50-75 grams
Organic rice drink with coconut (or water) - 150-200 ml
Place the filling ingredients in a blender and process them till you obtain a paste with a creamy texture. Just not add too much liquid because the paste needs to be firm.
Pour this chocolate filling in the pan over the crust. Use a spatula for a uniform distribution of the paste. Put the pan in the freezer and with 2 hours before serving transfer it into the refrigerator. You can put some berries over the top at the moment of serving.
