Potato and green onion creamy soup

A tasty creamy soup for rainy days (and not only). Green onions bring the spring in your bowl :), and the croutons bring joy to almost every child :). If you like thick creamy soups you can give it a try. Feel free to add or subtract any ingredient as long as you enjoy preparing it :). You can try potatoes with mushrooms or broccoli... The original recipe (my starting point) was with leek but because it is spring and we can find plenty of green onions on the local market I made this little change.

Let’s start

Slice the green onion and garlic in medium pieces and put them in a heavy pot together with the olive oil and a pinch of salt. Bring the pot at medium heat and as soon as you hear the first sizzle add the wine and set the heat to low. In the meantime peel the potatoes, the celery and the carrots and cut them in medium small pieces. After 5 minutes you can add them to the pot and cover with cold water. The water level should be just above the potatoes. Add a pinch of salt, bring to boil, then gently simmer for about 25 minutes or until the celery and the carrots are very soft (and of course the potatoes will be softer).

Turn off the heat and start pureeing the carrots and vegetables. It is better to separate the liquid first and add it when you puree the potatoes and the vegetables in the desired quantity. If you use a blender you can use a high speed setting for about 1 minute. If you want a very smooth soup you can strain it through a sieve. Honestly I skipped this step :). (Let the potatoes and vegetables cool down a little before blending otherwise you will have pressure in the blender… )

After blending the soup you can adjust the consistency by adding more liquid if you consider. This is the moment you can squeeze the lemon and add a little bit of lemon juice… Taste it for salt and pepper…

Reheat the soup when you serve it. Garnish it with chopped green onions, grated parmesan cheese and a drizzle of olive oil. It goes well with homemade bread croutons. (A good quality sourdough bread cut in pieces and baked in the oven will be just fine ;) )

INGREDIENTS - for 2 persons

  • Organic / Best you can get potatoes - around 400 grams

  • Organic / Best you can get celery - around 100 grams

  • Organic / Best you can get carrots - around 100 grams (optional)

  • Organic / Best you can get green onions - 150 grams (about 5 pcs.)

  • Organic / Best you can get green garlic - 1 pcs

  • Good quality bread croutons - around 50 grams

  • Best you can get white wine - 50 ml

  • Good quality extra virgin olive oil - 1.5 spoons or 15 ml

  • Organic / Best you can get lemon - 1/2 pcs

  • Organic / Best you can get parmesan cheese - 25 grams

  • A pinch of salt

  • A dust of pepper
