Amarena - Strawberry smoothie

End of spring and mid summer flavours with a touch of early autumn… (sounds complicated :) ?, well it isn’t)

Creamy but light, pink with deep burgundy accents… Sweet, sour, bitter…

A little bit of history first :)

Amarena is an italian type of cherry grown in Emilia-Romagna region of Italy (more exactly this type of cherries grow in the area of Bologna and Modena), developed by Gennaro Fabbri. The story says that his wife Rachele took black cherries from an orchard nearby her store in Portomaggiore and cooked them in sugar. For that delicious treat, Gennaro bought a ceramic jar from artist Riccardo Gatti, to thank his wife. They sold this way the cherry syrup and started a small company.

The commercial production started in 1905 under the Fabbri brand. Today you can still buy Fabbri products from the family owned company.

To be honest for today’s recipe I didn’t have Fabbri cherries in syrup (which I intend to order soon). I used a French black cherry jam sweetened with grape juice (best I could get in moment I imagined this smoothie). I used fresh strawberries from a local producer and frozen blueberries (from the forest).

So, who doesn’t like a strawberry smoothie ?

Feel free to add your personal touch

INGREDIENTS - For one person

  • Organic or Best you can get raw cashew - 25 grams

  • Organic or Best you can get strawberries - 250 grams

  • Organic or Best you can get blueberries (can be frozen) - 20 grams

  • Organic or Best you can get black bitter cherries jam - 40 grams

(Try Fabbri’s Amarena if you have the possibility :) )

  • Organic or Best you can get rice drink - 50 ml

(I used bio coconut-rice drink)

If you consider that the fruits aren’t sweet enough feel free to add some honey or maple syrup or for a thicker consistency you can add a spoon of oat flakes and/or half avocado…

The smoothie :

Put all the ingredients except the black cherries jam (or amarena cherries) in a powerful blender and mix about 1 minute to obtain a creamy smoothie. After you blend the smoothie add the amarena cherries or the jam and mix gently. You can serve it in a glass or a small bowl with a few cherries on the top. I prefer a thicker consistency…
