Spring Pesto Salad
It’s spring and it’s the time for fresh salads with seasonal ingredients. I wanted to make a fresh salad with pesto flavour but lighter. So I combined the pesto ingredients with other leaves, tuna and radishes and here it is. A fresh Spring Pesto Salad :)
INGREDIENTS - for 1 person
Good quality extra virgin olive oil - 1,5 spoons or 15 ml
Organic / Best you can get arugula leaves (a handful) - around 30 grams
Organic / Best you can get radishes - 30 grams
Organic / Best you can get baby spinach leaves (a handful) - around 30 grams
Organic / Best you can get fresh basil leaves - a few leaves
Best you can get tuna ( in brine or quality olive oil )- 50 grams
Organic / Best you can get pine seeds - 5 grams
Organic / Best you can get lemon - 1/2 pcs
Organic / Best you can get parmesan cheese - 15 grams
A pinch of salt
