The “Toscana Sandwich”

This sandwich is inspired by the movie “Toscana”. Long story short, a danish chef “Theo Dahl” travels in Toscana, Italy for a few days to finish a business (I do not intend to describe the movie here, I think you should see it yourself :) ) and there he finds more than he initially thought he could find. One night being hungry he enters the restaurant kitchen and after cleaning the mess inside he prepares a delicious sandwich with local ingredients. This was inspiring for me and I decided to recreate this sandwich of course with best ingredients I found. I replaced the eggplants with zucchini (I couldn’t find eggplants at this time of the year) and the Italian salami with prosciutto crudo. Although I did’t have all the ingredients I saw in the movie, I tried to keep the main idea…

INGREDIENTS - for 2 sandwiches

  • Good quality extra virgin olive oil - 3 spoons

  • Sourdough bread - 4 slices, around 300 grams

  • Organic / Best you can get zucchini - 250 grams

  • Organic / Best you can get garlic - 1 whole garlic head

  • Organic / Best you can get lettuce - 2 big leaves

  • Organic / Best you can get lemon - 1/2 pcs

  • Organic / Best you can get parmesan cheese - 40 grams

  • A pinch of salt

For the pesto

  • Good quality extra virgin olive oil - 2 spoons

  • Organic / Best you can get pine buds - 20 grams

  • Organic / Best you can get fresh basil - 15 grams or 10-15 leaves

  • Organic / Best you can get parmesan cheese - 20 grams

How I made it - STEP BY STEP

For the video you should watch the movie :)))

  • I made the pesto by blending the pesto ingredients (you can use a food processor, blender or the classic mortar and pestle like in the movie)

  • I heated a cast iron grill

  • I cut the zucchini in thin slices, salted them and squeezed some lemon juice over them

  • I sprinkled the olive oil over the bread slices.

  • I rubbed the bread with garlic (first I cut the garlic head in two) and then I sprinkled with a pinch of salt

  • I grilled the bread on both sides the cast iron grill

  • I grilled the zucchini

  • I spread pesto on the bread then place the grilled zucchini over

  • Over the zucchini I placed the lettuce and over the lettuce came the prosciutto crudo :)

  • Lastly I sprinkled with grated parmesan cheese and placed another (the second) bread slice on the top

  • These were my steps, I tried to stay as close to the movie scene as I could
