Taking Smoothie To Another Level

These days I watched a cute movie “Love’s Kitchen” together with family. I liked it very much. One interesting dish which recurrently appears in the movie is called “Trifle”. Everybody tastes it and their faces are changing :). But what is “Trifle” ? “Trifle” is a traditionally british dessert. It is served in a glass or jar with a spoon like a pudding. It can contain alcohol, whipped cream, but fruit pieces are a must. Inspired by the movie and the people’s reaction when tasting the “Trifle”, I wanted to create a special smoothie with fruit pieces. The different textures in it are meant to produce a “wow” effect when you taste it.

This is what I did. Vegan whipped cream with fruit pieces at the top, and an oatmeal-cashew smoothie at the bottom and a dry salty almond-cocoa layer in the middle.

INGREDIENTS - For 1 smoothie

The base layer

  • Good quality oat flakes - 50 grams

  • Good quality / Organic cashew - 20 grams

  • Good quality / Organic dried dates - 30 grams

  • Good quality / Organic rice drink - 150 ml

The middle layer

  • Good quality / Organic almonds - 20 grams

  • Good quality / Cocoa powder - 5 grams

The top layer

  • Good quality fat coconut milk - 150 grams

  • Good quality / Organic vanilla pod - 15 grams - THE SURPRISE

  • Good quality / Organic honey - 1 tbsp

  • Good quality / Organic strawberries  - 3 medium pcs.

The base layer

Mix all the ingredients with a powerful blender between 30 seconds and 1 minute until you get a creamy texture. Transfer the smoothie into the glass or jar you want to use.

The middle layer

Bake the almonds at 200 C about 5 minutes then grind them in a blender then add a pinch of sea salt and the cocoa powder. Sprinkle this mix over the smoothie in the jar (or glass).

The top layer

For the top layer I let the can with coconut milk in the refrigerator overnight. The fat will separate on the surface and the liquid will be on the bottom. Place the fat in a bowl, add the honey and the vanilla from the pod and mix with a mixer for about 4-5 minutes and you will get the vegan whipped cream. To be honest mine could look better :). But hope is the last we loose. Cut the strawberries in small pieces, mix them with the coconut whipped cream and add them with a spoon over the almonds layer in the jar. You can leave it 15 minutes in the refrigerator and serve it.
