Salmon And Potatoes - Oven Baked

With Tarragon And Mustard Sauce

A classic recipe maybe... But the combination of the hot salmon and potatoes with the cold sauce is simply irresistible. Works well also with some chilli over it or pickled cucumbers nearby :)

For a more flavoured sauce, you can add a half t-spoon of honey for a sweeter taste ... Or a half t-spoon of grated horseradish … Or some grated ginger ... You can explore.

INGREDIENTS - For two persons

  • Good quality extra virgin olive oil - 1 spoon

  • Good quality balsamic vinegar - 1 spoon

  • Good quality / Best you can get parmesan cheese - 1 tea spoon -

  • Optional

  • Organic / Best you can get potatoes :) - 500 grams

  • Organic / Best you can get salmon fillets

  • Salt

  • Pepper



    For the sauce :

  • Good quality extra virgin olive oil - 1 spoon

  • Organic / Best you can get garlic - 2 garlic cloves

  • A few leaves of chopped fresh tarragon / Dried tarragon - 1 spoon

  • Wholemeal Organic Yogurt / Best you can get - 150 grams

  • Organic Mustard / Best you can get - 1 spoon

  • A pinch of salt

THE SAUCE :

  • In a bowl mix two minutes with a spoon the olive oil with the chopped garlic cloves

  • Add the tarragon and mix another minute

  • Add the yogurt and the mustard and mix until all ingredients blend in and you obtain a uniform colour

THE SALMON AND THE POTATOES :

  • Heat the oven at 210 C

  • Place a sheet of baking paper on an oven tray - you can use the tray which comes with the oven

  • In the oven tray place a smaller baking tray big enough to accomm-

    odate 2 salmon fillets at about 125 g each

  • Put also a smaller sheet of baking paper in the smaller tray

  • Peel the potatoes, wash them and cut them in bigger pieces like wedges potatoes

  • Put the potatoes in a bowl, add the olive, the balsamic vinegar and the salt and mix the ingredients

  • Season the salmon with salt and pepper

  • Place the salmon in the smaller tray and the potatoes in the larger one

  • In the end the bigger tray should contain the potatoes and also the smaller tray

  • Insert the bigger tray in the oven at 210 C with ventilation and bake it for 30 to 35 minutes and sprinkle the parmesan over the potatoes when ready - optional
