Sardine Salad With Grilled Peppers

Well known for their high omega 3 and protein content, sardines are perfect for a winter salad … Some grilled sweet red peppers and arugula, and an interesting dressing with olive oil, dijon mustard and balsamic vinegar. Some pickled cucumbers should cut the extra sweetness … I kept this salad low on carbs, suitable for keto lovers and for the calories counters :), but if you are recovering after a workout or you need more energy feel free to add a baked potato or sweet potato …

The salad

  • Grill the red peppers on a cast iron skillet or grill for about 2-3 minutes on each side

  • Slice the grilled red peppers and the pickled cucumbers in fine round slices

  • In a large bowl put the arugula, the pumpkin seeds, the pickled cucumbers and the grilled red peppers and mix gently

  • Mix in a small jar or in a glass the ingredients for the dressing

  • Add the sardines over the top - the sardines are usually very soft so be careful if you want to keep them in bigger pieces. I personally don’t like to hard mix the sardines with the salad but it is up to you.

  • Transfer the salad on the serving plate. Enjoy:)…

INGREDIENTS - for 1 person

  • Best you can get sardines (Portuguese if you can find :))…) - 50-75 grams canned in olive oil

  • Organic / Best you can get lettuce - 100 grams

  • Organic / Best you can get arugula - a few leaves

  • Organic / Best you can get sweet red peppers - 100 grams

  • Organic / Best you can get pickled cucumbers  - 100 grams

  • Organic / Best you can get pumpkin seeds  - 5 grams

  • A pinch of salt

For the dressing

  • Good quality extra virgin olive oil - 1 tablespoon

  • Good quality balsamic vinegar - 5 ml or a tea spoon

  • Fresh lemon juice - 5 ml or a tea spoon

  • Best you can get Dijon mustard - 5 ml or a tea spoon

  • A pinch of dried tarragon leaves (optional)

  • A pinch of salt
