Sardine Salad With Grilled Peppers

The salad
Grill the red peppers on a cast iron skillet or grill for about 2-3 minutes on each side
Slice the grilled red peppers and the pickled cucumbers in fine round slices
In a large bowl put the arugula, the pumpkin seeds, the pickled cucumbers and the grilled red peppers and mix gently
Mix in a small jar or in a glass the ingredients for the dressing
Add the sardines over the top - the sardines are usually very soft so be careful if you want to keep them in bigger pieces. I personally don’t like to hard mix the sardines with the salad but it is up to you.
Transfer the salad on the serving plate. Enjoy:)…
INGREDIENTS - for 1 person
Best you can get sardines (Portuguese if you can find :))…) - 50-75 grams canned in olive oil
Organic / Best you can get lettuce - 100 grams
Organic / Best you can get arugula - a few leaves
Organic / Best you can get sweet red peppers - 100 grams
Organic / Best you can get pickled cucumbers - 100 grams
Organic / Best you can get pumpkin seeds - 5 grams
A pinch of salt
For the dressing
Good quality extra virgin olive oil - 1 tablespoon
Good quality balsamic vinegar - 5 ml or a tea spoon
Fresh lemon juice - 5 ml or a tea spoon
Best you can get Dijon mustard - 5 ml or a tea spoon
A pinch of dried tarragon leaves (optional)
A pinch of salt
